Mechanically, the accelerator controls the amount of fuel in the combustion chamber. But not all vehicles have the exact mechanism of how the accelerator works. There are 3 common different approaches to how an accelerator works.
The most common way is that the accelerator is linked to a throttle body and when a person applies pressure on this kind of accelerator the valve is open and sucks in more air into the engine. The second way is to have the accelerator connected to the injector pump so that when you press the pedal the car gets additional fuel, but once you release it the car gets zero fuel. Finally, the last one is focused more on a safety feature where the accelerator is wired to 3-position sensors. And these sensors decide whether the car speeds up, goes limp mode, or idles.
